Caldereta de Cabrito

Caldereta de Cabrito (kid boiler )

Ingredients for 6 persons:

  • 3 Kg. kid
  • 1 red pepper
  • 1 small glass white wine
  • 1 piece of kid´s liver
  • 3 garlic cloves with peel
  • 2 leaves laurel
  • Salt
  • Spicy red paprika
  • Parsley
  • Olive oil

Preparation:

Heat one finger oil in a pan or a casserole and fry the pepper cut in pieces, the pounded garlic and the liver also cut in small pieces. Take everything out when it gets a gold colour and keep it by side. Use the same oil to fry the kid cut in pieces and add the red paprika when it gets steamed.

Pound well what you have kept by side, add the glass of wine and some salt and mix it in the casserole with the kid. Cook it some minutes on a middle flame, then turn the flame down and sep cooking it until the meta is mild.
